Located in the Dairy Block building in Denver’s LoDo neighborhood, the Milk Market is a 17,000-sq-ft food hall with 15 dining options. It is operated by one owner, Bonanno Concepts, and each venue has its own character, offering a one-stop-shop with a variety of restaurant concepts under one roof.

The interior design team played with a mixture of themes ranging from a circus vibe, surf shack and ’50s style diner to an ellipse-shaped cocktail bar and a pastry shop whose concept stemmed from the movie poster for “The Grand Budapest Hotel.” 

Construction included $750,000 in kitchen equipment to support the venues. The space itself posed a challenge because it includes five kitchen hoods, 104 penetrations in a post-tension concrete deck and four different finished floor elevations—all of which were built within an occupied office and hotel.
